Superbowl, Bears and Cooking

I have not had too much opportunity to cook since the big roast, just some chicken in bulk, bulk roasted potatoes and breakfast everyday.

However with the Chicago Bears being in the Superbowl today and the fact that I am attending a party elsewhere, I am expected to bring something.

The first is a dip my mom created, just a cream cheese and onion pepper jelly from Harry and Davids. Have a jar of the jelly and 8oz of softened cream cheese.

Then per request I am doing Swedish meatballs in the Crockpot.

Wish there was something more, I am hoping for wings.

In an effort to preserve more of my assets I have decided to start cooking more often. I love cooking, but as of late I have been short on time, so I have been eating things that are ready quicker, and eating less.

My problem was that I was thinking about it wrong, I was thinking: “I do not have time to cook.” Instead I needed to think, “Where can I find time to cook?” I always cook in big batches and eat whatever it is that I cook throughout the week. But I need to start making specific meals.

Last night I finally bought a new Slow Cooker, I fell in love with them during college, while making chili. Todays recipe is a Pepsi Roast.

Ingredients:

  • 3lb Roast (I used Angus Top Round)
  • 16oz of Pepsi
  • 1 Packet dried Knorrs Onion Soup Mix
  • 1 Can of Cream of Mushroom Soup
  • 1/2 a Diced Onion
  • Handful of Baby Carrots
  • Handful of Baby White Potatoes

Throw it all in the slow cooker on LOW HIGH for 6 hours and it should be good to eat.

New Recipe Ideas

I am asking for help here on two dishes.

  • Meatloaf
  • Sloppy Joes

I can do standard dishes here or just spice them up a bit, but I would like some ideas on how to go over the top with them. Really change them, really make them different, preferably healthy.

Another New Sauce

Well another sauce in the pipeline. Just a relativly simple honey mustard sauce or dressing. I made some chicken nuggets today and needed a sauce. The nuggets came out pretty good, sauce came out awesome:

A few splashes of white wine vinegar

3 Tbsp of French’s yellow mustard

3 Tbsp of Grey Poupon

3 Tbsp of Honey

Salt/Pepper to taste

Just whisk it and its ready as a dip/sauce/dressing

New Sauce

I am working on creating my own new sauce, so far so good.

The sauce according to French cooking traditions is a Béchamel, because there is milk and flour in it. However I barely use either, I used them to just thicken the sauce a bit. I used the sauce over some bowtie pasta and chicken, it came out awesome, and everyone agreed it was something that they would pay for at a restaurant.

The basic ingredients in this sauce are:

  • Harpoon Ale
  • Frozen Peas
  • Salt/Pepper
  • Red Pepper Flakes
  • Chicken Stock
  • Splash of Milk
  • 1 Tbsp of Flour
  • Olive Oil
  • Garlic
